
This Frozen Fruit Cocktail Recipe, made with a blend of fresh and canned fruit sweetened with juice rather than corn syrup, is a much healthier alternative, but the concept of freezing the cups takes it over the top for me! I couldn’t wait to get started!
Fruit cocktail has always been a favorite of mine! When everyone else was screaming about the fruit cocktail in their school lunches, I was planning how to obtain theirs! Of again, that could have been due to the fact that it was swimming in thick syrup!
Fruit cocktail packed with heavy syrup, on the other hand, has extra calories and sugar that can make a huge impact on your diet.
INGREDIENTS
- 1/4 cup frozen berries
- 1-2 mint leaves
- 1 sachet of Stevia
- 45 ml of vodka
- 3/4 cup berry-scented carbonated water
- ice cubes
- 6 fruits to decorate
PREPARATION OF FROZEN FRUIT COCKTAIL RECIPE
STEP 1
In a medium saucepan, combine the berries, vanilla, sugar, and water. Bring the mixture to a boil, then reduce to a low heat and continue to cook for 10 minutes.

STEP 2
Blend the mixture in a blender or food processor until smooth. Set it aside to cool to room temperature. Berry Mixture can be refrigerated for up to two weeks.

STEP 3
If you have an aversion to seeds, you can push the mixture through a mesh strainer before cooling.

STEP 4
Add 1-2 tablespoons of the berry mixture to a champagne glass. Fill it with sparkling wine or champagne.

STEP 5
Garnish with your favorite berries and a small piece of fresh mint if you would love a splash of color that goes well with the berries!
