- 200 grams pumpkin
- 100 grams of oat flakes
- 100 grams of sugar

- 2 whole eggs
- 8 tablespoons of extra virgin olive oil
- 1 orange
- 1 pinch of cinnamon powder
- Water

Preparation of the recipe for sweet pumpkin and oatmeal bread:
STEP 1
Grease a bowl with a bit of butter and sprinkle it with a bit of flour.

STEP 2
Clean the orange well and grate the superficial part of the orange and reserve it. Peel the pumpkin, remove the seeds, chop it, and put it to cook in a pan with a bit of water. When cooked, drain and mash with a fork.

STEP 3
Put the flour in a bowl, add the nuts, the oat flakes, the sugar, the tablespoon of yeast, a pinch of cinnamon, the crushed cloves, and the orange zest. Mix well and add the eggs, the egg whites, the pumpkin puree, the orange juice, and the 8 tablespoons of oil.

STEP 4
Knead by hand until everything is perfectly united.

STEP 5
Pour the dough into the mold and place it in the oven at 200ºC for 35-40 minutes. Remove it from the oven, let it cool and unmold it.

STEP 6
Heat the blueberry jam and the apricot jam in 2 saucepans over high heat. Add a few drops of water to each and thin them out a bit. Serve separately.

STEP 7
Whip the cream a little, serve it in a bowl, chop some mint leaves and add them. Serve the cake and accompany it with sauces.
