- 4 eggs
- 100g of sugar
- 200g pastry flour
- 200g pumpkin
- chemical yeast
- 1 teaspoon ground cinnamon
- 1 Teaspoon vanilla extract
- A handful of pine nuts, walnuts, almonds, and pecan…
- 100ml olive or sunflower oil
HOW TO MAKE THE PUMPKIN PECAN CRUNCH CAKE RECIPE
In a bowl, we put the 4 eggs. We break them briefly with a rod and then add the sugar -which can be white or brown, of your choice-. Now we do beat well and mix both ingredients.
Add the oil, an ingredient that will give the cake a lot of juiciness, and mix again. You can use olive or sunflower oil. what you prefer
Now, on the bowl, we put a strainer. Inside this, we put the flour and yeast.
We give a light touch to the strainer, to sift the flour and introduce it to the rest of the ingredients. We mix everything again, until we have a homogeneous mass, without lumps for our pumpkin cake.
We introduce the rest of the ingredients. The grated pumpkin, the nuts, the teaspoon of vanilla and cinnamon essence, and the grated ginger. We mix everything again
Pour all this mixture into a biscuit mold. The mold will be previously smeared in butter, to prevent the cake from sticking to it. And add bread crumbs.
Apply nuts again over the breadcrumbs to make them more crunchy.
We introduce in the oven previously heated to 180ºC, heat up and down. We leave here for around 35 minutes until we can insert a toothpick and it comes out clean.
Remove it from the oven and let it cool down a bit. Then we unmold them and place them on a rack. We leave the pumpkin cake here to cool completely.
