
Simple Pumpkin Pancakes Recipe, or Carnival Tortillas, are a typical Canarian recipe that is traditionally prepared during Carnival. This is a quick and easy dessert to make with all the flavor and special sponginess that pumpkin gives.
INGREDIENTS
- 250g pumpkin
- 100 g of all-purpose flour
- 5 g baking powder (Royal type)
- 30 ml of milk
- 2 eggs
- 50g sugar
- 15 ml of anise
- 1 tablespoon of oil for the pan
- Honey to accompany (optional)
PREPARATION OF MAKING SIMPLE PUMPKIN PANCAKES RECIPE
STEP 1
We start the recipe by preparing the pumpkin. To do this, peel 250 g of pumpkin, chop it and cook it steamed or in water for about 20 or 30 minutes.

STEP 2
The time may vary, therefore, when we verify that the pumpkin can be easily punctured, we remove it from the pot

STEP 3
We put the well-drained cooked pumpkin in the blender glass with the rest of the ingredients: 100 g of sifted all-purpose flour with 5 g of baking powder, 30 ml of milk, 2 eggs, 50 g of sugar, and 15 ml of anise

STEP 4
We beat everything well until we get a homogeneous cream. Let the mixture rest in the fridge for half an hour.

STEP 5
we put a pan on the fire with 1 tablespoon of oil and we make the pancakes. For each pancake, we deposit about 30 or 40 ml of dough.

STEP 6
Let the pancakes fry for about 3 or 4 minutes and then turn them over. Let them cook another 3 minutes on the other side and remove them to a plate lined with kitchen paper to remove excess oil.

STEP 7
Once the pumpkin pancakes or Carnival tortillas are ready, we place them in a bowl and serve them alone or with a little honey.
