- 3 cups (720 ml) evaporated milk
- 1 cup (240 ml) egg whites
- 120 ml of honey
- 3½ cups (1.1 kg) roasted sweet potato
- 3 g (1 teaspoon) salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- 1 sheet of shortcrust pastry or shortcrust pastry
INSTRUCTIONS FOR SWEET POTATO PIE WITH EVAPORATED MILK AND BROWN SUGAR
Heat the oven to 220 ºC.
Place the milk, egg whites, honey, sweet potato, salt, ground cinnamon, ginger, and cloves into the Vitamix jar in the order listed and secure the lid.
On Vitamix mixers with programs, select the “Sauces and Spreads” program. Start the machine, until it stops because the program has been completed.
On any Vitamix model: select speed 1. Gradually increase speed to full power. Blend for about 30 seconds or until smoothie consistency.
Place the shortcrust pastry or shortcrust pastry in a 23 cm circular mold suitable for the oven. Pour batter made with Vitamix.
Bake for 15 minutes.
Reduce the oven temperature to 180 ºC. Bake for 40 minutes.
Let cool and serve.
