It is a very healthy garnish or first course.
INGREDIENTS – ⅓ cup of raw and unsalted cashews ( 50 g ) – 450 g green beans ( 1 pound) – ¾ cup vegetable broth ( 190 ml) – ⅓ cup unsweetened non-dairy milk ( 80 ml), we used soy milk – 1 tablespoon flour, we used brown rice flour – ½ teaspoon salt – ¼ teaspoon ground black pepper – 2 garlic clove – ½ onion – 170 g mushrooms ( 6 ounces) – Baked onion strips (optional)
STEP 1 Soak the cashews overnight or in hot water for at least an hour.
STEP 2 Cook the green beans in boiling water for a couple of minutes. strain and reserve.

STEP 3 Strain the cashews and put them in a blender together with the broth, milk, flour, salt, and pepper.
STEP 4 Chop the garlic, onion, and mushrooms and sauté them in a pan with a splash of water or oil until golden brown
STEP 5 Add the green beans and the sauce.
STEP 6 Stir and cook for about 5 to 10 minutes, or until the sauce thickens.
STEP 7 Serve with baked onion strips on top (optional).
