- 1.5 pounds of tomatillo husks removed
- 1 large poblano pepper, seeded and cut in half
- 2 jalapeno peppers, seeded and cut in half

- 2/3 cup chopped white onion
- 1/2 cup chopped fresh cilantro
- 2 garlic cloves, minced
- 1 lime juice
- 1/2 teaspoon sea salt + more to taste
FOR THE CHICKEN
- 2 pounds chicken thighs* or breast
- 2 teaspoons of cumin
- 1/2 cup chicken broth
Preparation of Making White Chicken Chili Verde Recipe
STEP 1
Start by making your green tomatillo sauce. Preheat your oven to 425 degrees. Cut the tomatillos in half and place them cut-side down on the baking sheet.
Place bell peppers cut side down on the same sheet. Lightly brush with oil and place in the oven. Cook for 12-15 minutes, or until the tops of the vegetables are blistered (see the photo in the post). Remove from oven.

STEP 2
Place roasted vegetables, onion, cilantro, garlic, lime, and sea salt in a blender. Pulse and blend until smooth (don’t pulse too hard).

STEP 3
Now place the chicken in the bottom of your Instant Pot. Pour the green sauce on top.
Add the chicken broth and cumin. Secure the lid on your Instant Pot, making sure the valve is in the sealed position. Select manual (or pressure for different models) and cook on high pressure for 10 minutes.

STEP 4
Use a quick release and release all the steam before opening the lid on your IP. Shred the chicken with a fork and serve, adding additional salt to taste.

For the slow cooker, place the chicken at the bottom of the slow cooker and top it with salsa verde. You don’t need the chicken brother. Add a little cumin. Simmer for 4-6 hours, or until chicken is fork-tender.
